Brian Langley, Food & Beverage Director, has been in the restaurant business for 35 years, with over 25 years of experience booking and running events. He was the Food & Beverage Director at Groton Inn & Suites for 24 years, spending the last year at Water’s Edge Resort & Spa. Brian is innovative and creative with both his menu and food presentation. His philosophy is this, “If you don’t see it on the menu, tell us what you want—we’ll create it.” Brian is a life-time Waterford resident, along with his wife, Jessica, and their children, Asia and Jayden.
Vito Trento, Executive Chef, is originally from Brooklyn, New York. He moved to Connecticut in 1977 to attend Teacher’s Memorial High School, where he began making spaghetti and meatballs for the students and staff. His talents in the kitchen drew so much attention that The Day wrote an article titled “The Watched Pot.” This sparked his teachers to enroll him in the newly-formed culinary program at the SE CT Regional Tech School, from which he graduated in 1981 with the designation “most likely to succeed.” Vito has worked in SE CT and RI since then, with his last job being at the Groton Inn & Suites for 16 1/2 years.
